RECIPE: GLUTENFREE M&M's Cookies

Something totally different then fashion, but it's a lifestyle blog. So, it's was time for a recipe. Last year I found out that I have celiac disease. In other words: I have a gluten allergy. I always loved to bake, but after I got diagnosed, I stopped with baking. Because baking glutenfree is totally something different. In May I started to bake a cake for my birthday. It was my first glutenfree baking experience and I loved it. My father is a baker and he was overwhelmed by my cake. I did something good, I think. So, I starting baking again.

Yesterday the daughter of a friend of my came over and she wanted to make cookies. We decided to make this delicious M&M's cookies.  Here is the recipe:

  • 300 gr M&M's
  • 200 gr glutenfree flour. I used the Schär Mix-c
  • 100 gr Caster Sugar
  • 75 gr Sugar
  • Pinch of salt
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Fiberhusk
  • 1 egg
  • 85 gr butter

Mix the dry ingredients together and add the butter and egg as last. Mix this all and knead this all to a dough. Heat the oven at 180 celcius. Take a baking tray and use baking paper at the bottom. Make small balls from the dough and lay them on the baking tray. Put the tray in the oven and bake the cookies for 18/20 minutes.

Enjoy your cookies!

  6. My sister-in-law can't eat gluten either so I'll have to share this recipe with her :) And then maybe she'll make them and I can eat them...or I could make them for her...I guess that would be nice of me. lol
